Job Description

📌 Job Overview

The Chef De Partie is responsible for managing a specific section of the kitchen (such as hot kitchen, cold kitchen, pastry, or specialty cuisine). This role ensures high-quality food production, consistency in taste and presentation, and effective supervision of junior kitchen staff in a fast-paced, international galley environment.

🔧 Key Responsibilities

  • Manage and operate an assigned kitchen section independently
  • Prepare and cook dishes as per recipes and company standards
  • Ensure consistency in quality, portioning, and presentation
  • Supervise and train Commis chefs and Demi Chef De Partie
  • Maintain hygiene and sanitation standards (HACCP compliance)
  • Monitor stock levels and coordinate with inventory/store team
  • Ensure proper storage and rotation of ingredients (FIFO method)
  • Assist Sous Chef in daily kitchen operations
  • Maintain discipline and teamwork within the section

👨‍🍳 Skills & Requirements

  • Diploma/Degree in Hotel Management or Culinary Arts preferred
  • 3–6 years of experience in a professional kitchen (hotel/cruise/fine dining)
  • Strong knowledge of international cuisines and advanced cooking techniques
  • Leadership skills to manage a kitchen section and team
  • Ability to work under pressure in high-volume service
  • Good communication and organizational skills
  • Strong understanding of food safety and hygiene standards
